Ingredients

  • 1 (8 oz / 225g) can tomato sauce
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper, to taste
  • 1 ½ cups (150g) shredded cheddar cheese

Directions

  1. Cook the Rice:
    Begin by cooking the rice according to package instructions. Once cooked, set aside.
  2. Brown the Ground Beef:
    In a large skillet, cook the ground beef over medium heat until browned, breaking it up into crumbles as it cooks. Drain excess fat if necessary. Add the chopped onions and minced garlic to the beef, cooking for an additional 2-3 minutes until softened.
  3. Combine the Ingredients:
    Stir in the diced bell peppers, diced tomatoes, tomato sauce, oregano, basil, salt, and pepper. Simmer for about 5 minutes until the peppers are just tender and everything is well combined.
  4. Assemble the Casserole:
    Preheat your oven to 350°F (175°C). In a greased 9×13-inch baking dish, spread the cooked rice in an even layer. Top with the beef and vegetable mixture. Sprinkle the shredded cheddar cheese evenly over the top.
  5. Bake the Casserole:
    Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  6. Serve:
