Ready in under an hour, it’s a perfect weeknight meal that delivers lasagna’s hearty, cheesy goodness with every spoonful.

Ingredients

  • 0.75 lb ground beef
  • 1 small onion (about 0.15 lb), diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or beef broth
  • 1 cup marinara sauce
  • 1 cup lasagna noodles, broken into bite-sized pieces
  • 1 tsp Italian seasoning
  • 1 tsp dried basil
  • Salt and pepper to taste
  • ½ cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Fresh basil for garnish (optional)

Directions

  1. Cook the Beef: In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked, about 5–6 minutes. Drain any excess fat.
  2. Sauté Aromatics: Add the diced onion and garlic to the pot, cooking for another 3–4 minutes until the onion is softened and fragrant.
  3. Add Tomatoes and Broth: Pour in the crushed tomatoes, broth, and marinara sauce. Stir in the Italian seasoning, basil, salt, and pepper. Bring to a gentle boil.
  4. Cook the Noodles: Add the broken lasagna noodles to the pot, stirring well. Reduce the heat to a simmer and cook for 12–15 minutes, or until the noodles are tender, stirring occasionally.
  5. Add Cheeses: Stir in the ricotta cheese until it blends into the soup, then add the shredded mozzarella and Parmesan. Continue cooking until the cheeses melt, giving the soup a creamy, cheesy texture.
  6. Serve: Ladle the soup into bowls, garnish with fresh basil if desired, and enjoy the rich, comforting flavors of lasagna in a bowl!

Notes

  • Substitutions: You can use Italian sausage instead of ground beef for extra flavor or swap lasagna noodles with other pasta shapes like rotini or penne.
  • For a Creamier Soup: Add a splash of heavy cream or half-and-half before serving for a richer, creamier broth.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently, adding a bit of broth if the soup thickens.
  • Nutritional Perk: This dish is packed with protein from the beef and cheeses, making it both filling and satisfying.

Enjoy this One-Pot Lasagna Soup as a delicious, comforting meal with all the taste of lasagna and none of the fuss!
