Ingredients

  • 1 lb (450g) ground beef

  • 1 can (15 oz/425g) tomato sauce
  • 4 cups (960ml) beef broth
  • 1/2 cup (90g) uncooked rice
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 2 tbsp (30ml) olive oil

Directions

  1. Cook the Ground Beef:
    • In a large pot or Dutch oven, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon. Remove any excess grease.
  2. Sauté Aromatics:
    • Add the diced onion and minced garlic to the pot. Cook for 2-3 minutes, stirring frequently, until the onion softens and becomes translucent.
  3. Add Vegetables:
    • Stir in the chopped cabbage and carrot slices. Cook for another 3-4 minutes, allowing the cabbage to wilt slightly.
  4. Build the Soup Base:

  5. Simmer the Soup:
    • Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 25-30 minutes, stirring occasionally, until the rice is tender and the flavors meld together.
  6. Adjust Seasoning and Serve:
