  • 8 large potatoes Russet potatoes work best
  • 1 cup sour cream
  • 2 cups cheddar cheese shredded
  • 6 slices bacon cooked and crumbled
  • 0.5 cup green onions chopped
  • 0.5 cup milk or as needed
  • 4 tablespoons butter melted
  • 1 teaspoon salt or to taste
  • 0.5 teaspoon black pepper freshly ground, or to taste

Preparation Steps

  • Preheat your oven to 400°F (200°C).
  • Wash and scrub potatoes; pierce several times with a fork.
  • Bake potatoes in preheated oven until tender, about 1 hour. Cool slightly and peel.
  • Mash the potatoes with butter, milk, and sour cream until smooth.
  • Stir in cheddar cheese, bacon, and green onions.
  • Season with salt and pepper to taste.
  • Transfer to a casserole dish and bake at 350°F (175°C) for 15 minutes, or until heated through.
