Stuffed Lemon Cookies

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 0.5 cup butter softened
  • 2 tablespoons lemon zest freshly grated
  • 1 teaspoon baking soda

Preparation Steps

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, cream together the butter and sugar until light and fluffy.
  • Add in the lemon zest and mix until well combined.
  • Gradually add in the dry ingredients, including flour and baking soda, and mix until just combined.
  • Scoop dough onto prepared baking sheet, leaving space between cookies.
  • Bake for 12-15 minutes, or until the edges are golden brown.
