Preparation Steps
Place the eggs in a saucepan and cover with water. Bring to a boil and then remove from heat. Cover and let sit for 10 minutes.
Transfer the eggs to an ice bath to stop cooking. Peel once cooled.
Slice the hard-boiled eggs in half. Remove yolks and place in a bowl.
Mix egg yolks with mayonnaise, sriracha, mashed avocado, lime juice, salt, and pepper. Blend until smooth.
Season the shrimp with Cajun seasoning and sauté in olive oil until pink, about 2-3 minutes per side.
Fill egg whites with yolk mixture using a piping bag, then top each with a shrimp.
Garnish with chopped cilantro and a sprinkle of paprika.
Notes
For a milder flavor, reduce the sriracha in the yolk mixture.
