Savory BBQ Chicken Sliders with Creamy Garlic Mac & Cheese

  • 4 lbs boneless skinless chicken thighs trimmed of excess fat
  • 2 cups barbecue sauce use your favorite brand
  • 1 tablespoon smoked paprika for seasoning the chicken
  • 2 boxes elbow macaroni 16 oz each
  • 1 stick unsalted butter for the cheese sauce
  • 4 cups shredded cheese cheddar and mozzarella blend
  • 2 cups whole milk for creamy texture
  • 1 teaspoon minced garlic adds a rich flavor
  • 24 count slider buns preferably brioche

Preparation Steps

  • Preheat your grill to medium-high heat (about 375°F).
  • Season chicken thighs with smoked paprika, salt, and pepper.
  • Grill chicken for about 15 minutes per side, basting with barbecue sauce during the last 5 minutes.
  • Cook the elbow macaroni according to package instructions. Drain and set aside.
  • In a large pot, melt butter over medium heat. Stir in minced garlic and cook for 1 minute.
  • Gradually whisk in milk, then slowly add shredded cheese, stirring until melted and smooth.
  • Fold cooked macaroni into cheese sauce until thoroughly coated.
  • Assemble sliders by slicing slider buns and filling with sliced grilled chicken and a scoop of garlic mac & cheese.
  • Serve immediately while warm and enjoy!

Notes

Feel free to add some pickles or coleslaw for extra crunch!
