Instructions
Preparation Steps
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, and salt.
Add the cold butter and cut into the flour mixture until it resembles coarse crumbs.
Stir in the cheddar cheese and bacon.
In a separate bowl, beat the eggs and buttermilk together. Mix into the dry ingredients until just combined.
Turn the dough out onto a floured surface, knead gently, and roll into a 1-inch thick circle. Cut into wedges.
Place the scones on the prepared baking sheet and bake for 20-25 minutes until golden.
Notes
These scones are best served warm and can be stored in an airtight container for up to 3 days.
