Ingredients
- 2 tbsp olive oil
- 2 chicken breasts about 1 pound total
- 1 egg
- 1 cup panko breadcrumbs
- 1/2 cup Parmesan cheese freshly grated
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 cup marinara sauce
- 1 1/2 cups mozzarella shredded
- 2 tbsp parsley minced for garnish
Instructions
Line a baking sheet with foil, brush it with olive oil, position an oven rack second from the top, and preheat the oven to 400°F.
Slice each chicken breast horizontally into two pieces and pound the four pieces to an even thickness. Pat dry and season with some of the salt and pepper.
Combine the panko, Parmesan, oregano, garlic powder, remaining salt, and pepper in one shallow dish. Whisk the egg in another dish.
Dip each chicken piece in egg, coat thoroughly in the breadcrumb mixture, and arrange on the prepared baking sheet.
Bake for 15 minutes, or until the chicken is cooked through.
Flip the chicken, spoon 1/4 cup marinara over each piece, and top with mozzarella. Broil for 2 to 4 minutes until the cheese is melted and bubbling and the edges are browned. Garnish with parsley if desired.
