One-Pot Macaroni Cheeseburger Soup

  • 1 pound ground beef lean
  • 1 cup chopped onion
  • 2 cloves garlic minced
  • 4 cups beef broth low sodium
  • 1 cup diced tomatoes with juice
  • 1 cup macaroni uncooked
  • 2 cups shredded cheddar cheese
  • 0.5 cup milk
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper to taste

Preparation Steps

  • In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the chopped onion and minced garlic to the pot and cook until softened.
  • Stir in the beef broth, diced tomatoes, macaroni, salt, and pepper. Bring to a boil.
  • Reduce heat to low and simmer for 15-20 minutes, or until macaroni is tender.
  • Stir in the shredded cheddar cheese and milk until the cheese has melted and the soup is creamy.
