Minestrone Soup

A hearty and flavorful minestrone soup recipe, perfect for a chilly evening. This recipe includes a variety of vegetables and beans for a nutritious and delicious meal.

  • 1 cup Diced onion
  • 2 cloves Garlic, minced
  • 1 cup Carrots, chopped
  • 1 cup Celery, chopped
  • 1 cup Green beans, trimmed and halved
  • 1 cup Diced tomatoes
  • 1 cup Small pasta (ditalini or elbow)
  • 1 can (15 ounces) Cannellini beans, rinsed and drained
  • 8 cups Vegetable broth
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Preparation Steps

  • In a large pot or Dutch oven, sauté the onion and garlic in olive oil until softened.
  • Add the carrots, celery, and green beans and cook for 5 minutes.
  • Stir in the diced tomatoes, pasta, cannellini beans, vegetable broth, oregano, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until the pasta is cooked through and the vegetables are tender.
  • Serve hot.

Notes

For a richer flavor, add a bay leaf during simmering. You can also add other vegetables, such as zucchini or spinach, to this soup.
