Instructions
Preparation Steps
In a large pot or Dutch oven, sauté the onion and garlic in olive oil until softened.
Add the carrots, celery, and green beans and cook for 5 minutes.
Stir in the diced tomatoes, pasta, cannellini beans, vegetable broth, oregano, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until the pasta is cooked through and the vegetables are tender.
Serve hot.
Notes
For a richer flavor, add a bay leaf during simmering. You can also add other vegetables, such as zucchini or spinach, to this soup.
