French Onion Soup

This classic French Onion Soup is rich in flavor, with a savory broth and perfectly caramelized onions, topped with crusty bread and melted cheese.

  • 4 tablespoons unsalted butter for caramelizing the onions
  • 4 large yellow onions, thinly sliced
  • 1 teaspoon sugar to enhance caramelization
  • 1 cup dry white wine
  • 4 cups beef broth can substitute with chicken broth
  • 1 cup grated Gruyère cheese
  • 4 slices French baguette toasted

Preparation Steps

  • Melt butter in a large pot over medium heat. Add onions and cook, stirring frequently, until golden brown and caramelized, about 20 minutes.
  • Add sugar, and continue cooking for another 5 minutes until onions are deep golden brown.
  • Stir in wine and bring to a simmer, scraping up any browned bits. Cook until wine is reduced by half.
  • Add beef broth and bring to a boil. Reduce heat and simmer for 15 minutes, seasoning with salt and pepper to taste.
  • Preheat the broiler. Ladle soup into oven-safe bowls. Place toast on top and sprinkle generously with cheese.
  • Broil until cheese is bubbly and golden brown, about 3 minutes. Serve hot.

Notes

This soup can be stored in the refrigerator for up to 3 days. Reheat gently before serving.
