  • 1 tablespoon baking powder
  • 0.25 teaspoon salt
  • 1 cup fresh raspberries washed and dried
  • 1 cup milk
  • 0.25 cup vegetable oil
  • 1 large egg lightly beaten
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest freshly grated

Preparation Steps

  • Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  • In a large bowl, combine flour, sugar, baking powder, and salt.
  • In another bowl, whisk together milk, oil, egg, vanilla extract, and lemon zest.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Gently fold in the raspberries.
  • Divide batter evenly among the muffin cups.
  • Bake for 25 minutes, or until a toothpick inserted into the center comes out clean. Cool on a wire rack.
