This easy cilantro lime rice tastes just like Chipotle’s—fresh, zesty, and perfectly fluffy every time. Made with simple ingredients like lime juice, cilantro, and olive oil, it’s a versatile side dish that pairs perfectly with burrito bowls, tacos, or grilled meats.
1cupextra long grain ricesuch as jasmine or basmati
2cupswater
1teaspoonkosher salt
3tablespoonsfresh cilantrochopped
2tablespoonsfresh lime juicefrom about 1 large lime

In a medium heavy pot with a tight-fitting lid, combine the rice, water, 1 teaspoon of olive oil, and kosher salt.
Bring the mixture to a boil over high heat. Once most of the water has evaporated and just skims the top of the rice, reduce the heat to low, cover the pot, and simmer for 15 minutes without stirring or lifting the lid.
Remove the pot from the heat and keep it covered for an additional 5 minutes (no peaking!). After 5 minutes, fluff the cooked rice with a fork.
In a medium bowl, combine the fluffed rice with the chopped fresh cilantro, lime juice, and the remaining 2 teaspoons of olive oil. Toss gently until all ingredients are completely mixed.
Notes
