  • 6 tbsp (85 g) unsalted butter, melted

For the Cheesecake Filling:

  • 24 oz (680 g) cream cheese, softened
  • 1 cup (200 g) granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • ½ cup (120 g) sour cream
  • ¼ cup (60 ml) heavy cream

For the Topping:

  • ½ cup (120 g) caramel sauce, plus extra for drizzling
  • ½ cup (90 g) semi-sweet chocolate chips
  • ¼ cup (60 ml) heavy cream
  • ½ cup (60 g) chopped pecans

Directions

Step 1: Make the Crust

  1. Preheat oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan.
  4. Bake for 8-10 minutes, then let cool.

  • 1 cup sugar divided
  • 5 tablespoons butter melted

  • 1 cup caramel sauce
  • 1 cup pecans chopped

Preparation Steps

  • Preheat the oven to 325°F (160°C).
  • Mix graham cracker crumbs, 1/4 cup of sugar, and melted butter in a bowl. Press onto the bottom of a greased 9-inch springform pan.
  • In a large bowl, beat cream cheese and remaining sugar until smooth. Add eggs one at a time, mixing on low speed after each just until blended. Stir in vanilla extract.
  • Pour over crust. Bake for 55-60 minutes or until the center is set. Cool on a wire rack for 10 minutes. Carefully run a knife around the edge of the pan to loosen and remove sides.
  • Spread caramel sauce over cheesecake and sprinkle with pecans. Microwave chocolate chips in a microwave-safe bowl until melted; stir until smooth. Drizzle over the cheesecake.
