Ingredients

  • 1 box (15.25 oz) lemon cake mix
  • 1 box (3.4 oz) instant lemon pudding mix
  • 3 large eggs
  • ½ cup vegetable oil
  • 1 cup water
  • Zest of 1 lemon
  • 1 tsp vanilla extract
  • 1 ½ cups powdered sugar
  • 2 tbsp fresh lemon juice
  • 2 tbsp melted butter
  • 1 tbsp milk

Directions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with paper liners.
  2. Prepare the Batter: In a large mixing bowl, combine the lemon cake mix, lemon pudding mix, eggs, vegetable oil, water, lemon zest, and vanilla extract. Beat together with an electric mixer on medium speed for about 2 minutes until the batter is smooth and well combined.
  3. Fill the Muffin Tin: Spoon the batter into the muffin tin, filling each cup about ¾ full.
  4. Bake: Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean. Remove the muffins from the oven and let them cool for 5 minutes in the tin before transferring them to a wire rack to cool completely.
  5. Prepare the Glaze: In a small bowl, mix together the powdered sugar, fresh lemon juice, melted butter, and milk until smooth.
  6. Glaze the Muffins: Once the lemon blossoms have cooled, drizzle the glaze over each muffin, making sure to cover them evenly. Allow the glaze to set for a few minutes before serving.
