Instructions
Preparation Steps
Brown the ground beef in a skillet over medium-high heat. Add the taco seasoning and cook for 5-7 minutes, until cooked through.
In a large bowl, combine the chopped lettuce, tomatoes, corn, red onion, cheddar cheese, and cilantro.
In a small bowl, whisk together the dressing ingredients: olive oil, lime juice, honey, cumin, garlic, salt, and pepper.
Pour the dressing over the salad and toss to coat. Top with the cooked beef and optional tortilla strips before serving.
Notes
This salad is a great low-carb option if you skip the tortilla strips. Add jalapeños for an extra kick!
