Zesty Lime Chicken Tacos: A Flavorful Twist!

Main Ingredients

  • 2.5 lbs boneless skinless chicken thighs cut into strips
  • 4 cloves garlic minced
  • 1 cup fresh cilantro chopped
  • 1 cup chicken broth
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon cumin
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper

Avocado-Cilantro Sauce

  • 2 avocados pitted and peeled
  • 0.5 cup sour cream
  • 0.25 cup cilantro leaves
  • 1 tablespoon lime juice
  • 1 pinch salt to taste

Taco Assembly

  • 12 small flour tortillas
  • 1.5 cups shredded cheese cheddar or Monterey Jack

Preparation Steps

  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Sauté garlic until fragrant.
  • Add the chicken strips and cook until browned on all sides.
  • Pour in chicken broth, lime juice, and season with cumin, salt, and black pepper. Let simmer until chicken is cooked through and sauce thickens.
  • For the avocado-cilantro sauce, blend avocados, sour cream, cilantro, lime juice, and a pinch of salt in a food processor until smooth.
  • Warm the tortillas in a dry skillet. Spoon chicken mixture onto each tortilla, drizzle with avocado-cilantro sauce and sprinkle with shredded cheese.

Notes

For extra zest, consider adding a diced jalapeño to the sauce or topping with additional cilantro and lime wedges.
