  • 3 cloves garlic finely minced
  • 1 large red bell pepper sliced into strips
  • 2 cups snap peas trimmed
  • 1 cup baby corn halved
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon lemon zest
  • 1 teaspoon black pepper freshly ground
  • 1 tablespoon soy sauce low-sodium
  • 1 teaspoon cornstarch mixed with 2 tablespoons of water

Preparation Steps

  • Heat olive oil in a large pan over medium-high heat until shimmering.
  • Add minced garlic and stir-fry for 30 seconds, until fragrant.
  • Add red bell pepper, snap peas, and baby corn. Stir-fry for about 5 minutes until the vegetables start to soften.
  • Stir in lemon juice, lemon zest, black pepper, and soy sauce. Toss well to coat.
  • Pour the cornstarch mixture into the pan, stirring continuously until the sauce thickens.
