Instructions
Preparation Steps
Heat olive oil in a large pan over medium-high heat until shimmering.
Add minced garlic and stir-fry for 30 seconds, until fragrant.
Add red bell pepper, snap peas, and baby corn. Stir-fry for about 5 minutes until the vegetables start to soften.
Stir in lemon juice, lemon zest, black pepper, and soy sauce. Toss well to coat.
Pour the cornstarch mixture into the pan, stirring continuously until the sauce thickens.
