Instructions
Preparation Steps
Preheat oven to 400°F (200°C).
In a large mixing bowl, combine olive oil, lemon juice, lemon zest, Italian seasoning, minced garlic, salt, and pepper.
Add the chicken breasts to the bowl, coating them well with the marinade.
Place the chicken and baby potatoes on a baking sheet. Bake for 25 minutes.
Add cherry tomatoes to the baking sheet. Continue baking for an additional 15 minutes, or until chicken is cooked through and vegetables are tender.
Garnish with fresh parsley before serving.
Notes
For a spicier kick, add a pinch of crushed red pepper flakes to the marinade.
