Zesty Lemon Herb Chicken with Roasted Vegetables

This citrusy lemon herb chicken paired with roasted vegetables makes for an easy and delicious weeknight dinner. Fresh herbs and zesty lemon create a refreshing flavor boost.

  • 2 lbs chicken breasts boneless, skinless
  • 1 lb baby potatoes halved
  • 1 cup cherry tomatoes halved
  • 2 tablespoons olive oil extra virgin
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon lemon zest grated
  • 2 teaspoons Italian seasoning or herbs de Provence
  • 1 teaspoon salt
  • 1 teaspoon black pepper freshly ground
  • 4 cloves garlic minced
  • 2 tablespoons fresh parsley chopped

Preparation Steps

  • Preheat oven to 400°F (200°C).
  • In a large mixing bowl, combine olive oil, lemon juice, lemon zest, Italian seasoning, minced garlic, salt, and pepper.
  • Add the chicken breasts to the bowl, coating them well with the marinade.
  • Place the chicken and baby potatoes on a baking sheet. Bake for 25 minutes.
  • Add cherry tomatoes to the baking sheet. Continue baking for an additional 15 minutes, or until chicken is cooked through and vegetables are tender.
  • Garnish with fresh parsley before serving.

Notes

For a spicier kick, add a pinch of crushed red pepper flakes to the marinade.
