This Walking Taco Casserole is a fun and easy way to enjoy all the flavors of your favorite walking tacos in a comforting casserole dish. Perfect for weeknights or parties!

  • 0.5 pound ground beef
  • 1 package taco seasoning
  • 1 can diced tomatoes with green chilies, undrained
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 box corn chips or Fritos, crushed
  • 2 cups shredded cheddar cheese

Preparation Steps

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, brown the ground beef over medium heat. Drain off any excess grease.

  • Stir in the taco seasoning, diced tomatoes with green chilies (undrained), black beans, and corn. Cook for 5-7 minutes, stirring occasionally, until heated through.

  • Spread half of the crushed corn chips in the bottom of a 9x13 inch baking dish.

  • Pour the meat mixture evenly over the chips.
  • Top with the remaining crushed corn chips.

  • Sprinkle the shredded cheddar cheese over the top.

  • Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  • Let stand for a few minutes before serving. Serve with your favorite taco toppings like sour cream, salsa, lettuce, and avocado.

Notes

This casserole is easily customizable. Feel free to add other vegetables like bell peppers or onions to the meat mixture. For a spicier kick, add a pinch of cayenne pepper.
