Vegetable Detox Soup

A light and refreshing vegetable soup perfect for a healthy cleanse.

Ingredients

  • 1 tablespoon Olive Oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 medium Carrot diced
  • 1 stalk Celery diced
  • 0.5 pound Zucchini diced
  • 1 cup Broccoli Florets
  • 1 cup Spinach fresh
  • 6 cups Vegetable Broth
  • 0.5 teaspoon Dried Thyme
  • 0.5 teaspoon Dried Oregano
  • 0.25 teaspoon Black Pepper freshly ground
  • 1 Salt to taste

Preparation Steps

  • Heat olive oil in a large pot or Dutch oven over medium heat.
  • Add chopped onion and cook until softened, about 5-7 minutes.

  • Stir in minced garlic and cook for 1 minute more until fragrant.

  • Add diced carrots, celery, zucchini, and broccoli florets to the pot.

  • Pour in the vegetable broth and add dried thyme, oregano, and black pepper.

  • Bring the soup to a boil, then reduce heat and simmer for 15-20 minutes, or until vegetables are tender.
  • Stir in fresh spinach and cook until wilted, about 2 minutes.

  • Serve hot.

Notes

This soup is best enjoyed fresh. You can add other detox-friendly vegetables like kale or leeks.
