  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup sugar
  • 0.5 cup unsalted butter softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sliced almonds

Preparation Steps

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a medium bowl, whisk together flour, baking powder, and salt.
  • In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in almonds.
  • Shape the dough into a log about 12 inches long and 2 inches wide on the prepared baking sheet.
  • Bake for 25-30 minutes, or until golden brown.
  • Let cool completely on the baking sheet. Slice the log diagonally into 1/2-inch thick biscotti.
  • Place the biscotti slices, cut-side down, back onto the baking sheet. Bake for another 10-12 minutes, or until lightly golden and crisp.
  • Let cool completely before serving.

Notes

Store biscotti in an airtight container at room temperature for up to a week.
