Instructions
Preparation Steps
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together flour, baking powder, and salt.
In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in almonds.
Shape the dough into a log about 12 inches long and 2 inches wide on the prepared baking sheet.
Bake for 25-30 minutes, or until golden brown.
Let cool completely on the baking sheet. Slice the log diagonally into 1/2-inch thick biscotti.
Place the biscotti slices, cut-side down, back onto the baking sheet. Bake for another 10-12 minutes, or until lightly golden and crisp.
Let cool completely before serving.
Notes
Store biscotti in an airtight container at room temperature for up to a week.
