Grinder Grilled Cheese Sandwich

Ultimate Turkey and Swiss Grinder Melt

Ingredients
  

Main Ingredients

  • 4 slices whole-grain bread around 1/2 inch thick
  • 3 tbsp butter softened
  • 1 cup sliced deli turkey thinly sliced
  • 6 slices Swiss cheese
  • 1 tbsp Dijon mustard or to taste
  • 3 cups spinach fresh and washed
  • 1 medium red onion thinly sliced
  • 0.5 cup cherry tomatoes halved
  • 0.25 cup green olives sliced

Salad Dressing

  • 4 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 0.5 tsp oregano dried
  • 0.5 tsp black pepper freshly ground

Instructions
 

Preparation Steps

  • Spread half a tablespoon of butter on one side of each bread slice.
  • Place two slices of bread, butter-side down, in a preheated skillet over medium heat. Layer with mustard, cheese, turkey, and another slice of cheese.
  • Top with the second slice of bread, butter-side up. Cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
  • In a bowl, mix together olive oil, balsamic vinegar, oregano, and black pepper.
  • Toss spinach, red onion, cherry tomatoes, and green olives with the dressing.
  • Open the grilled sandwiches, add the salad mixture on top, close, and serve immediately.

Notes

For an extra zesty flavor, add a sprinkle of lemon juice to the salad just before serving.
