Instructions
Preparation Steps
Spread half a tablespoon of butter on one side of each bread slice.
Place two slices of bread, butter-side down, in a preheated skillet over medium heat. Layer with mustard, cheese, turkey, and another slice of cheese.
Top with the second slice of bread, butter-side up. Cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
In a bowl, mix together olive oil, balsamic vinegar, oregano, and black pepper.
Toss spinach, red onion, cherry tomatoes, and green olives with the dressing.
Open the grilled sandwiches, add the salad mixture on top, close, and serve immediately.
Notes
For an extra zesty flavor, add a sprinkle of lemon juice to the salad just before serving.
