  • 32 ounces white cheddar cheese shredded
  • 8 ounces cream cheese cut into cubes
  • 2 cans fire-roasted tomatoes 15 ounces each, undrained
  • 2 cans pinto beans 15 ounces each, drained and rinsed
  • 1 cup frozen corn thawed
  • 1 medium jalapeño pepper seeds removed, diced
  • 1 tablespoon cumin ground
  • 2 tablespoons lime juice freshly squeezed
  • 0.5 cup fresh cilantro chopped
  • 12 ounces tortilla chips for serving

Preparation Steps

  • In a large skillet over medium heat, cook the smoked sausage until browned on both sides.
  • Reduce heat to low; add the white cheddar cheese and cream cheese. Stir frequently until completely melted and smooth.
  • Stir in the fire-roasted tomatoes, pinto beans, corn, and jalapeño. Cook until the mixture is heated through.
  • Mix in the cumin, lime juice, and half of the cilantro. Stir well to combine.
  • Garnish with the remaining cilantro before serving. Serve warm with tortilla chips.

Notes

To enhance the flavor, you can add a pinch of cayenne pepper or a splash of hot sauce if you like it spicy. You can make this dish ahead and reheat over low heat when ready to serve.
