Twice-Baked Potato Casserole

Creamy twice-baked potato casserole with bacon, cheese, and chives.

  • 4 large potatoes Russet potatoes
  • 0.5 cup bacon bits cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 2 tablespoons sour cream
  • 2 tablespoons butter melted
  • 1 tablespoon chopped chives
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • Preheat oven to 400°F (200°C).
  • Wash and pierce potatoes. Bake for 1 hour, or until tender.
  • Cut potatoes in half lengthwise and scoop out the flesh, leaving a thin shell.
  • Mix the potato flesh with bacon bits, cheese, sour cream, butter, chives, salt, and pepper.
  • Spoon the mixture back into the potato skins.
  • Bake for another 20 minutes, or until heated through and bubbly.

Notes

Serve hot as a side dish or main course.
