  • 8 pieces large potatoes baked and cooled
  • 1.5 cups sour cream
  • 1 cup shredded cheddar cheese plus more for topping
  • 0.5 cup bacon bits cooked
  • 0.25 cup chopped green onions
  • 2 tbsp butter melted
  • 1 tsp salt
  • 0.5 tsp black pepper

Preparation Steps

  • Preheat the oven to 350°F (175°C).
  • Cut baked potatoes into chunks and place in a large bowl.
  • Add sour cream, 1 cup cheddar cheese, bacon bits, green onions, butter, salt, and pepper. Combine gently.
  • Transfer the potato mixture into a greased casserole dish.
  • Sprinkle additional cheddar cheese on top.
  • Bake for 20-25 minutes or until heated through and cheese is melted.

Notes

Feel free to add more bacon or other toppings like chives for extra flavor.
