  • 1.5 lbs Ground Turkey
  • 1 cup Chopped Onion
  • 2 cloves Garlic, minced
  • 4 cups Chicken Broth
  • 1 cup Diced Tomatoes
  • 1 cup Carrots, chopped
  • 1 cup Celery, chopped
  • 0.5 tsp Dried Oregano
  • 0.5 tsp Dried Basil
  • 0.25 tsp Salt
  • 0.25 tsp Black Pepper

Preparation Steps

  • Brown the ground turkey in a large pot over medium heat. Drain off any excess grease.
  • Add the onion and garlic to the pot and cook until softened, about 5 minutes.
  • Stir in the chicken broth, diced tomatoes, carrots, celery, oregano, basil, salt, and pepper.
  • Bring the mixture to a boil, then reduce heat and simmer for 30-45 minutes, or until the vegetables are tender.
  • Serve hot.

Notes

This soup can be made ahead of time and reheated. Leftovers can be stored in the refrigerator for up to 3 days.
