  • 2 lbs ground turkey lean
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder or to taste
  • 1 teaspoon onion powder
  • 0.5 teaspoon oregano dried
  • 0.5 teaspoon paprika
  • 0.5 cup all-purpose flour
  • 2 cups beef broth low sodium
  • 1.5 cups tomato sauce
  • 2 cans black beans drained & rinsed, 15 oz each
  • 2 cups frozen corn

Preparation Steps

  • In a large nonstick skillet over medium-high heat, cook the ground turkey with salt and black pepper until browned. Break the meat into small pieces as it cooks and drain any excess fat.
  • Add cumin, garlic powder, chili powder, onion powder, oregano, and paprika. Stir the spices into the turkey and cook for 2 minutes.
  • Sprinkle flour over the turkey mixture, stirring continuously for 1 minute until fully combined.
  • Gradually pour in beef broth, stirring constantly, followed by the tomato sauce. Mix until well combined and bring to a boil.
  • Once boiling, add the black beans and corn. Reduce heat to medium and let simmer for 20-25 minutes until the mixture thickens.
  • Serve the turkey mixture over cooked rice and add your favorite taco toppings.

Notes

Feel free to adjust the spiciness by adding more chili powder or a dash of cayenne pepper. Top with shredded cheese, avocado, or jalapeños for extra flavor.
