Turkey Taco Burrito Bowls

A healthy and flavorful twist on traditional tacos, featuring seasoned ground turkey served over a bed of rice with fresh toppings in a bowl format.

  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 0.5 teaspoon cumin
  • 0.5 teaspoon paprika
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon onion powder
  • to taste salt and pepper
  • 1 cup cooked brown rice or quinoa
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 whole avocado, diced
  • 0.5 cup cherry tomatoes, halved
  • 0.25 cup red onion, finely chopped
  • 0.25 cup fresh cilantro, chopped
  • 1 whole lime, cut into wedges

Instructions
 

Preparation Steps

  • Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until no longer pink, about 6–8 minutes.
  • Stir in chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Cook for 1 minute until fragrant.
  • Add black beans and corn to the skillet. Stir well and cook for another 3–4 minutes until heated through. Remove from heat.
  • Divide cooked rice or quinoa among four bowls. Top each with the turkey mixture, diced avocado, cherry tomatoes, red onion, and cilantro.
  • Serve with lime wedges on the side. Optional: add shredded cheese, sour cream, or hot sauce before serving.
