This tropical mango no-bake cake is an easy and refreshing dessert made with layers of delightful mango puree, creamy mascarpone, and crispy coconut biscuits. Perfect for any gathering!

  • 3 cups mango puree fresh or canned
  • 16 ounces mascarpone cheese softened
  • 1 cup powdered sugar
  • 2 teaspoons vanilla extract
  • 14 ounces coconut biscuits about two small packages
  • 2 cups whipped topping divided
  • 1 tablespoon lime juice freshly squeezed

Preparation Steps

  • Prepare a 9x9-inch dish by lining the bottom with coconut biscuits.
  • In a large bowl, beat mascarpone cheese and vanilla extract until creamy. Gradually add powdered sugar and continue beating for 1-2 minutes.
  • Gently fold in 1 cup of whipped topping into the mascarpone mixture until well combined.
  • Spread half of the mascarpone mixture evenly over the layer of biscuits.
  • Layer half of the mango puree over the mascarpone layer, spreading it evenly.
  • Add another layer of coconut biscuits over the mango layer.
  • Repeat layers with remaining mascarpone mixture and mango puree. Top with remaining whipped topping, cover, and refrigerate for at least 4 hours.

Notes

Optional: Garnish with lime zest and toasted coconut flakes before serving for added texture and flavor.
