Preparation Steps
Prepare a 9x9-inch dish by lining the bottom with coconut biscuits.
In a large bowl, beat mascarpone cheese and vanilla extract until creamy. Gradually add powdered sugar and continue beating for 1-2 minutes.
Gently fold in 1 cup of whipped topping into the mascarpone mixture until well combined.
Spread half of the mascarpone mixture evenly over the layer of biscuits.
Layer half of the mango puree over the mascarpone layer, spreading it evenly.
Add another layer of coconut biscuits over the mango layer.
Repeat layers with remaining mascarpone mixture and mango puree. Top with remaining whipped topping, cover, and refrigerate for at least 4 hours.
Notes
Optional: Garnish with lime zest and toasted coconut flakes before serving for added texture and flavor.
