Tender Pork Chops in Onion Gravy with Garlic Mashed Potatoes

This comforting dish of tender pork chops enveloped in a savory onion gravy, served with fluffy garlic mashed potatoes, will quickly become a family favorite.

Ingredients
  

For the Garlic Mashed Potatoes

  • 2.5 pounds Russet potatoes peeled and cubed
  • 6 cloves garlic peeled
  • 1 cup milk warmed
  • 4 tablespoons butter softened
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper freshly ground

For the Pork Chops and Onion Gravy

  • 4 pieces pork chops bone-in
  • 2 tablespoons olive oil
  • 1 large onion sliced
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 teaspoon rosemary dried
  • 0.5 teaspoon black pepper freshly ground
  • 0.5 teaspoon salt

Cooking Instructions

  • Place the potatoes and garlic in a large saucepan. Cover with water and bring to a boil over high heat. Cook until the potatoes are tender, about 15 minutes.
  • Drain the potatoes and garlic; return to the pot. Add warmed milk and softened butter. Mash until smooth. Season with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Season pork chops with salt and pepper and sear for 3-4 minutes per side until golden brown. Remove and set aside.
  • In the same skillet, add sliced onions and sauté until golden. Stir in flour and cook for 1 minute. Gradually whisk in chicken broth.
  • Add rosemary and return pork chops to the skillet. Simmer until the gravy thickens and the pork chops are cooked through, about 15 minutes.
  • Serve pork chops with onion gravy over the mashed potatoes.

Notes

For a more robust flavor, add a splash of white wine to the gravy. Serve with seasonal green vegetables for a complete meal.
