Tender Pork Chops in Onion Gravy with Garlic Mashed Potatoes
This comforting dish of tender pork chops enveloped in a savory onion gravy, served with fluffy garlic mashed potatoes, will quickly become a family favorite.
Place the potatoes and garlic in a large saucepan. Cover with water and bring to a boil over high heat. Cook until the potatoes are tender, about 15 minutes.
Drain the potatoes and garlic; return to the pot. Add warmed milk and softened butter. Mash until smooth. Season with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Season pork chops with salt and pepper and sear for 3-4 minutes per side until golden brown. Remove and set aside.
In the same skillet, add sliced onions and sauté until golden. Stir in flour and cook for 1 minute. Gradually whisk in chicken broth.
Add rosemary and return pork chops to the skillet. Simmer until the gravy thickens and the pork chops are cooked through, about 15 minutes.
Serve pork chops with onion gravy over the mashed potatoes.
