  • 1 cup butter melted
  • 14 oz sweetened condensed milk
  • 2 tablespoons vanilla extract
  • 2 tablespoons pumpkin pie spice
  • 1 box spice cake mix 2-layer size
  • 1 cup butter cold and cut into small cubes
  • 1 cup pecans chopped
  • Whipped cream or vanilla ice cream for serving, optional

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or baking spray.
  • In a large bowl, combine sweet potatoes, melted butter, sweetened condensed milk, vanilla extract, and pumpkin pie spice. Blend with an electric mixer until mostly smooth.
  • Spread the sweet potato mixture evenly into the prepared dish. Sprinkle the dry cake mix on top, covering completely without mixing.
  • Top with cubed butter and sprinkle chopped pecans evenly.
  • Bake for 50 minutes or until golden brown. Let cool for 30 minutes before serving with whipped cream or ice cream if desired.

Notes

Ensure potatoes are well-drained for a smoother base. Toast pecans for more flavor.
