Sweet and Sour Chicken

Ingredients
- 1 lb boneless skinless chicken breasts cut into 1-inch pieces
- 1/2 cup cornstarch for coating
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons vegetable oil plus more as needed
- 1/2 cup pineapple juice
- 1/4 cup rice vinegar
- 1/3 cup ketchup
- 1/3 cup light brown sugar packed
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- 1 red bell pepper cut into chunks
- 1 yellow onion cut into chunks
- 1 cup pineapple chunks drained
- 2 green onions sliced, for serving
Instructions
Whisk the pineapple juice, rice vinegar, ketchup, brown sugar, and soy sauce in a bowl. Stir the cornstarch with water in a separate small cup.
Toss the chicken with salt and pepper, then coat each piece evenly with cornstarch and shake off the excess.
Heat the oil in a large skillet over medium-high heat. Cook the chicken in a single layer in batches if needed, turning until golden and cooked through, about 6 to 8 minutes. Transfer to a plate.
Add the bell pepper and onion to the skillet and stir-fry until slightly softened but still bright, about 3 minutes.
Pour in the sauce mixture and bring it to a simmer. Stir in the cornstarch slurry and cook until glossy and thick enough to coat a spoon, 1 to 2 minutes.
Return the chicken to the skillet with the pineapple. Toss until everything is coated and hot, then serve with rice and sliced green onions if desired.
