Preparation Steps
Preheat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper or lightly grease it.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2–3 minutes.
Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in sprinkles if using.
Press the dough evenly into the prepared baking pan. Sprinkle coarse sugar on top for extra crunch if desired.
Bake for 20–25 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out clean.
Cool completely in the pan before cutting into 16 bars.
Notes
These bars stay soft and chewy for days when stored in an airtight container at room temperature.
