Sugar Cookie Bars

Soft, chewy, and buttery sugar cookie bars with a crisp top—perfect for any occasion. These easy-to-make bars are made from a simple shortbread-like dough that bakes into golden, sweet squares.

  • 2 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1.5 cups granulated sugar
  • 2 teaspoons pure vanilla extract
  • 0.5 cup sprinkles (optional)
  • 0.25 cup coarse sugar (for topping, optional)

Preparation Steps

  • Preheat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper or lightly grease it.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2–3 minutes.
  • Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in sprinkles if using.
  • Press the dough evenly into the prepared baking pan. Sprinkle coarse sugar on top for extra crunch if desired.
  • Bake for 20–25 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out clean.
  • Cool completely in the pan before cutting into 16 bars.

Notes

These bars stay soft and chewy for days when stored in an airtight container at room temperature.
