Preparation Steps
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Use a sharp knife to create a pocket in each chicken breast, being careful not to cut all the way through.
Season the chicken with half of the salt and pepper.
Stuff each chicken breast with 1/4 cup pesto and 1/2 cup mozzarella. Secure with toothpicks if necessary.
In a large skillet, heat olive oil over medium-high heat. Sear chicken breasts for 2-3 minutes on each side until golden brown.
Transfer the chicken to the prepared baking sheet. Surround with cherry tomatoes and sprinkle with Italian seasoning.
Bake in the preheated oven for 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Notes
To enhance the flavors, consider adding a dash of balsamic glaze to the roasted tomatoes just before serving.
