  • 4 pieces boneless, skinless chicken breasts approximately 6 ounces each
  • 1 teaspoon salt divided
  • 1 teaspoon pepper divided
  • 2 tablespoons olive oil extra virgin
  • 1 cup pesto sauce
  • 2 cups shredded mozzarella cheese freshly shredded
  • 1 cup cherry tomatoes halved
  • 1 tablespoon Italian seasoning

Preparation Steps

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Use a sharp knife to create a pocket in each chicken breast, being careful not to cut all the way through.
  • Season the chicken with half of the salt and pepper.
  • Stuff each chicken breast with 1/4 cup pesto and 1/2 cup mozzarella. Secure with toothpicks if necessary.
  • In a large skillet, heat olive oil over medium-high heat. Sear chicken breasts for 2-3 minutes on each side until golden brown.
  • Transfer the chicken to the prepared baking sheet. Surround with cherry tomatoes and sprinkle with Italian seasoning.
  • Bake in the preheated oven for 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

Notes

To enhance the flavors, consider adding a dash of balsamic glaze to the roasted tomatoes just before serving.
