Instructions
Preparation Steps
Preheat the oven to 375°F (190°C).
Slice the bell peppers in half and remove seeds and membranes.
In a skillet over medium heat, heat the olive oil and add the black beans, corn, and taco seasoning. Sauté for 5 minutes.
Place the pepper halves on a baking sheet and fill each with the bean and corn mixture.
Top each pepper with shredded cheddar cheese.
