  • 1 tablespoon taco seasoning store-bought or homemade
  • 1 tablespoon olive oil for sautéing
  • 1 cup salsa spicy or mild

Preparation Steps

  • Preheat the oven to 375°F (190°C).
  • Slice the bell peppers in half and remove seeds and membranes.
  • In a skillet over medium heat, heat the olive oil and add the black beans, corn, and taco seasoning. Sauté for 5 minutes.
  • Place the pepper halves on a baking sheet and fill each with the bean and corn mixture.
  • Top each pepper with shredded cheddar cheese.
  • Bake for 15-20 minutes, or until the cheese is melted and bubbly.
  • Serve immediately with salsa.
