Preparation Steps
Preheat your oven to 350°F (175°C) and grease a 12-cup muffin pan with non-stick cooking spray.
In a large mixing bowl, combine the oats, milk, strawberries, honey, vanilla extract, baking powder, salt, and egg. Stir until well combined.
Divide the mixture evenly among the muffin cups, filling each about two-thirds full.
Bake in the preheated oven for 25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
Allow the oatmeal cups to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
