  • 1 cup strawberries Chopped into small pieces
  • 0.5 cup honey Or maple syrup as a vegan substitute
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 large egg Lightly beaten
  • As needed non-stick cooking spray For greasing the muffin pans

Preparation Steps

  • Preheat your oven to 350°F (175°C) and grease a 12-cup muffin pan with non-stick cooking spray.
  • In a large mixing bowl, combine the oats, milk, strawberries, honey, vanilla extract, baking powder, salt, and egg. Stir until well combined.
  • Divide the mixture evenly among the muffin cups, filling each about two-thirds full.
  • Bake in the preheated oven for 25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  • Allow the oatmeal cups to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Feel free to swap strawberries with your favorite berries or add nuts for extra crunch!
