Ingredients

  • 1 cup heavy whipping cream chilled
  • 2 tbsp powdered sugar
  • 1 tsp gelatin powder optional, for extra stability
  • 1 tbsp cold water for blooming gelatin

Instructions
 

Step 1: Prepare the Strawberry Purée

  • In a blender or food processor, blend the strawberries, granulated sugar, lemon juice, and vanilla extract until smooth.
  • Strain through a fine-mesh sieve to remove seeds (optional for extra smoothness).

Step 2: Stabilize the Mousse (Optional)

  • If using gelatin, sprinkle 1 tsp of gelatin over 1 tbsp cold water and let it sit for 5 minutes.
  • Microwave for 5-10 seconds until dissolved, then mix it into the strawberry purée.

Step 3: Whip the Cream

  • In a mixing bowl, beat chilled heavy cream with powdered sugar using a hand mixer until soft peaks form.
  • Gently fold the strawberry purée into the whipped cream until fully combined.

Step 4: Chill and Serve

  • Spoon or pipe the mousse into serving glasses or ramekins.
  • Chill in the fridge for at least 2 hours to set.
  • Garnish with fresh strawberries, mint leaves, or a dollop of whipped cream before serving.
