Instructions
Making the Donut Dough
In a large bowl, whisk together the flour, sugar, salt, nutmeg, and yeast.
In a separate bowl, combine the warm milk, melted butter, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until a shaggy dough forms.
Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic. The dough will be slightly sticky.
Gently knead in the chopped strawberries until evenly distributed.
Place the dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1-1.5 hours, or until doubled in size.
Shaping and Frying the Donuts
Gently punch down the risen dough to release the air.
Turn the dough out onto a lightly floured surface and roll it out to about 1/2 inch thickness.
Use a donut cutter or two different sized round cookie cutters to cut out the donuts. Re-roll scraps and cut out more donuts.
Place the cut-out donuts on a baking sheet lined with parchment paper. Cover with plastic wrap and let rise for 30-45 minutes, or until slightly puffed.
Pour about 3 inches of vegetable oil into a large, heavy-bottomed pot or Dutch oven. Heat the oil over medium heat to 350-375°F (175-190°C). Use a candy thermometer to monitor the temperature.
Carefully place the donuts into the hot oil, a few at a time, being careful not to overcrowd the pot. Fry for 1-2 minutes per side, or until golden brown.
Remove the donuts from the oil with a slotted spoon and place them on a wire rack lined with paper towels to drain excess oil. Let cool slightly before glazing.
Making the Strawberry Glaze
Blend fresh strawberries in a food processor or blender until smooth. Strain the puree through a fine-mesh sieve to remove seeds.
In a medium bowl, whisk together the powdered sugar and strawberry puree. Add milk or water, 1 tablespoon at a time, until the glaze reaches your desired consistency. It should be thick enough to coat the donuts but thin enough to spread easily.
Dip the slightly cooled donuts into the strawberry glaze, coating them evenly.
Sprinkle with crushed freeze-dried strawberries for added flavor and visual appeal.
Place the glazed donuts on a wire rack and let the glaze set for about 15-20 minutes before serving.
