Strawberry Cream Cheese Icebox Cake Recipe

This refreshing and creamy strawberry icebox cake is perfect for summer days. Layers of strawberries, cream cheese, and graham crackers.

  • 16 oz cream cheese softened
  • 1 cup heavy cream
  • 1.5 cup powdered sugar sifted
  • 2 cups fresh strawberries sliced
  • 2 sleeves graham crackers about 18 crackers

Preparation Steps

  • Beat cream cheese and sugar together in a bowl until smooth and creamy.
  • In another bowl, whip heavy cream until stiff peaks form. Gently fold into cream cheese mixture.
  • Layer graham crackers at the bottom of a 9x13 inch pan.
  • Spread half of the cream cheese mixture over the crackers and layer with half of the sliced strawberries.
  • Repeat layering with remaining ingredients. Finish with a layer of cream cheese mixture and strawberries on top.
  • Refrigerate for at least 4 hours or until set before serving.

Notes

Use freshest strawberries for best flavor.
