Strawberry Brownies

Strawberry Brownies

Delicious and fudgy brownies swirled with fresh strawberry puree.

Ingredients
  

Brownies

  • 0.5 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 0.5 cup light brown sugar
  • 2 large eggs at room temperature
  • 1 teaspoon vanilla extract
  • 0.5 cup all-purpose flour
  • 0.25 cup unsweetened cocoa powder
  • 0.5 teaspoon salt
  • 0.5 cup semi-sweet chocolate chips

Strawberry Swirl

  • 1 cup fresh strawberries, hulled
  • 2 tablespoons granulated sugar

Instructions
 

Preparation

  • Preheat oven to 350°F (175°C). Grease and flour an 8x8 inch baking pan or line with parchment paper.
  • In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until combined. Beat in eggs one at a time, then stir in vanilla extract.
  • In a separate bowl, whisk together flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Fold in the chocolate chips.
  • In a small blender or food processor, combine strawberries and sugar. Puree until smooth.
  • Pour half of the brownie batter into the prepared pan. Dollop spoonfuls of the strawberry puree over the batter. Swirl gently with a knife or skewer. Pour the remaining brownie batter over the top and swirl again.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached (not wet batter).
  • Let cool completely in the pan on a wire rack before cutting into squares.

Notes

For an extra strawberry kick, you can add a few fresh strawberry slices on top before baking.
