  • 1.5 cups grated mozzarella cheese divided
  • 6 ounces baby spinach fresh, chopped
  • 1 medium red bell pepper diced

Preparation Steps

  • Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin with cooking spray.
  • In a large bowl, whisk together eggs, whole milk, salt, and black pepper until fully blended.
  • Stir in 1 cup of mozzarella cheese, chopped spinach, and diced red bell pepper into the egg mixture.
  • Distribute the egg mixture evenly into the muffin tin cups, about three-quarters full.
  • Top each filled cup with the remaining mozzarella cheese.
  • Bake in the preheated oven for 30 to 35 minutes, or until quiches are set and golden on top.
  • Let cool slightly, then carefully remove from the tin. Serve warm.

Notes

To make these quiches gluten-free, use a certified gluten-free cooking spray. Experiment with different veggies or cheeses according to your preference!
