Spicy Lime Shrimp Tacos with Creamy Avocado Salsa

Ingredients
  

For the Spicy Shrimp

  • 1 pound large shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 0.5 teaspoon salt
  • 3 tablespoons lime juice freshly squeezed

For the Avocado Salsa

  • 2 ripe avocados peeled, pitted, and diced
  • 1 cup cherry tomatoes halved
  • 0.25 cup red onion diced
  • 1 lime juice
  • 0.25 cup cilantro chopped

Cooking Steps

  • In a large bowl, toss the shrimp with olive oil, chili powder, cumin, salt, and lime juice. Set aside to marinate for 10 minutes.
  • Heat a skillet over medium-high heat. Add the shrimp and cook for 3-4 minutes on each side until they are opaque and cooked through.
  • In another bowl, combine diced avocado, cherry tomatoes, red onion, lime juice, and cilantro. Toss gently to combine.
  • Warm the tortillas in a dry skillet for about 30 seconds on each side until soft.
  • Assemble the tacos by placing shrimp on each tortilla and topping with a generous scoop of avocado salsa.

Notes

These spicy lime shrimp tacos are perfect for a summer get-together. For extra heat, add some sliced jalapeños to the salsa!
