Instructions
Cooking Steps
In a large bowl, toss the shrimp with olive oil, chili powder, cumin, salt, and lime juice. Set aside to marinate for 10 minutes.
Heat a skillet over medium-high heat. Add the shrimp and cook for 3-4 minutes on each side until they are opaque and cooked through.
In another bowl, combine diced avocado, cherry tomatoes, red onion, lime juice, and cilantro. Toss gently to combine.
Warm the tortillas in a dry skillet for about 30 seconds on each side until soft.
Assemble the tacos by placing shrimp on each tortilla and topping with a generous scoop of avocado salsa.
