  • 2 lbs baby potatoes halved
  • 0.25 cup olive oil extra virgin
  • 3 tablespoons lemon juice freshly squeezed
  • 1 tablespoon chili powder optional for spiciness
  • 2 tablespoons Italian seasoning or mixed herbs
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper freshly ground

Preparation Steps

  • Combine olive oil, lemon juice, chili powder, Italian seasoning, salt, and pepper in a large bowl.
  • Add the halved baby potatoes to the bowl and toss until well coated with the marinade.
  • Preheat a grill pan over medium heat. Once hot, place the potatoes cut-side down on the grill.
  • Grill the potatoes for 10 minutes on each side, or until crispy and cooked through.
  • Remove from the grill and let rest for 5 minutes before serving.

Notes

Adjust the chili powder to your taste for spiciness or omit if preferred.
