Spicy Chorizo and Spinach Breakfast Bake

  • 16 oz chorizo sausage spicy
  • 12 large eggs beaten
  • 2 cups shredded mozzarella cheese
  • 6 cups fresh spinach roughly chopped
  • 1 tsp black pepper ground
  • 1 tsp salt
  • 1 tbsp olive oil

Preparation Steps

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  • In a large skillet over medium heat, cook the crumbled chorizo thoroughly. Remove from pan and set aside.
  • In the same skillet, add olive oil and sauté the spinach until wilted, about 2-3 minutes.
  • In a large bowl, whisk together the eggs, mozzarella, salt, and black pepper until well combined.
  • Layer the cooked chorizo and spinach in the prepared baking dish. Pour the egg mixture over the top.
  • Bake in the preheated oven for about 35-40 minutes until the eggs are set and the top is golden brown.
  • Let the casserole cool for 10 minutes before slicing and serving.

Notes

This dish can be made ahead and refrigerated overnight for a quick and easy breakfast. Pair with fresh fruit for a balanced meal.
