Preparation Steps
Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
In a large skillet over medium heat, cook the crumbled chorizo thoroughly. Remove from pan and set aside.
In the same skillet, add olive oil and sauté the spinach until wilted, about 2-3 minutes.
In a large bowl, whisk together the eggs, mozzarella, salt, and black pepper until well combined.
Layer the cooked chorizo and spinach in the prepared baking dish. Pour the egg mixture over the top.
Bake in the preheated oven for about 35-40 minutes until the eggs are set and the top is golden brown.
Let the casserole cool for 10 minutes before slicing and serving.
Notes
This dish can be made ahead and refrigerated overnight for a quick and easy breakfast. Pair with fresh fruit for a balanced meal.
