Spicy Chicken and Veggie Stir-Fry

A flavorful and quick chicken stir-fry that brings together tender chicken pieces, crisp vegetables, and a spicy sauce. Perfect for a busy dinner night.

  • 1.5 pounds chicken breast cut into thin strips
  • 2 tablespoons vegetable oil
  • 1 cup bell pepper sliced
  • 1 cup snow peas trimmed
  • 1 cup carrot julienned
  • 3 tablespoons soy sauce low-sodium
  • 2 tablespoons honey
  • 1 teaspoon sriracha sauce or more to taste
  • 2 cloves garlic minced

Preparation Steps

  • In a large skillet, heat the vegetable oil over medium-high heat. Add the chicken strips and cook until they are golden brown, about 5-7 minutes.
  • Add the bell pepper, snow peas, and carrots to the skillet. Stir-fry for 3-4 minutes or until the vegetables are tender-crisp.
  • In a small bowl, whisk together soy sauce, honey, sriracha, and garlic. Pour the sauce over the chicken and vegetables.
  • Reduce the heat to low and simmer for another 2-3 minutes, stirring occasionally, until the sauce slightly thickens.
  • Serve the stir-fry hot, garnished with sesame seeds and chopped scallions if desired.

Notes

For a vegetarian option, substitute chicken with tofu and adjust the cooking time as necessary.
