Preparation Steps
In a large skillet, heat the vegetable oil over medium-high heat. Add the chicken strips and cook until they are golden brown, about 5-7 minutes.
Add the bell pepper, snow peas, and carrots to the skillet. Stir-fry for 3-4 minutes or until the vegetables are tender-crisp.
In a small bowl, whisk together soy sauce, honey, sriracha, and garlic. Pour the sauce over the chicken and vegetables.
Reduce the heat to low and simmer for another 2-3 minutes, stirring occasionally, until the sauce slightly thickens.
Serve the stir-fry hot, garnished with sesame seeds and chopped scallions if desired.
Notes
For a vegetarian option, substitute chicken with tofu and adjust the cooking time as necessary.
