  • 1 can pumpkin puree 15 oz can
  • 2 cups vegetable broth low sodium
  • 1 cup coconut milk full fat
  • 1 tbsp olive oil
  • 1 tsp ground cinnamon or to taste
  • 1 tsp ground ginger
  • 1 clove garlic minced
  • 0.5 tsp nutmeg
  • 0.25 tsp salt or to taste

Preparation Steps

  • In a large pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  • Add pumpkin puree, vegetable broth, and coconut milk to the pot. Stir well to combine.
  • Stir in cinnamon, ginger, nutmeg, and salt. Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
  • Blend the soup using an immersion blender until smooth and creamy.
  • Taste and adjust seasoning if necessary. Serve hot, garnished with additional cinnamon or a drizzle of coconut milk if desired.

Notes

This soup can easily be made vegan by ensuring all ingredients are plant-based. Add a pinch of cayenne pepper for a spicy kick.
