Preparation Steps
In a large pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
Add pumpkin puree, vegetable broth, and coconut milk to the pot. Stir well to combine.
Stir in cinnamon, ginger, nutmeg, and salt. Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
Blend the soup using an immersion blender until smooth and creamy.
Taste and adjust seasoning if necessary. Serve hot, garnished with additional cinnamon or a drizzle of coconut milk if desired.
Notes
This soup can easily be made vegan by ensuring all ingredients are plant-based. Add a pinch of cayenne pepper for a spicy kick.
