For the Chicken:
- 2 cups cooked chicken grilled, shredded, or rotisserie
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- Salt & pepper to taste
For the Wraps:
- 4 large flour tortillas
- 1/2 cup black beans drained & rinsed
- 1/2 cup corn canned, fresh, or frozen & thawed
- 1/2 cup shredded cheddar or Mexican blend cheese
- 1/4 cup diced tomatoes
- 1/4 cup chopped cilantro optional
For the Sauce:
- 1/4 cup sour cream or Greek yogurt
- 2 tbsp mayonnaise
- 1 tsp lime juice
- 1/2 tsp chipotle powder or hot sauce optional
Step 1: Prepare the Chicken
In a skillet over medium heat, heat olive oil.
Add the cooked chicken, chili powder, cumin, paprika, garlic powder, salt, and pepper.
Stir and cook for 3-4 minutes until well-coated and warm. Remove from heat.
Step 2: Make the Sauce
In a small bowl, whisk together sour cream, mayonnaise, lime juice, and chipotle powder until smooth.
Step 3: Assemble the Wraps
Lay a tortilla flat and spread a tablespoon of sauce over the center.
