Southwest Chicken Wrap | Easy Lunch Ideas

This Southwest Chicken Wrap is packed with juicy chicken, black beans, corn, cheese, and a zesty sauce, all wrapped in a soft tortilla. It's quick to make, full of flavor, and perfect for meal prepping or a busy weekday lunch!

Ingredients
  

For the Chicken:

  • 2 cups cooked chicken grilled, shredded, or rotisserie
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • Salt & pepper to taste

For the Wraps:

  • 4 large flour tortillas
  • 1/2 cup black beans drained & rinsed
  • 1/2 cup corn canned, fresh, or frozen & thawed
  • 1/2 cup shredded cheddar or Mexican blend cheese
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped cilantro optional

For the Sauce:

  • 1/4 cup sour cream or Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tsp lime juice
  • 1/2 tsp chipotle powder or hot sauce optional

Instructions
 

Step 1: Prepare the Chicken

  • In a skillet over medium heat, heat olive oil.
  • Add the cooked chicken, chili powder, cumin, paprika, garlic powder, salt, and pepper.
  • Stir and cook for 3-4 minutes until well-coated and warm. Remove from heat.

Step 2: Make the Sauce

  • In a small bowl, whisk together sour cream, mayonnaise, lime juice, and chipotle powder until smooth.

Step 3: Assemble the Wraps

  • Lay a tortilla flat and spread a tablespoon of sauce over the center.
  • Layer with chicken, black beans, corn, cheese, tomatoes, and cilantro.
  • Fold in the sides, then roll it up tightly like a burrito.

Step 4: Toast the Wrap (Optional)

  • Heat a dry skillet or grill pan over medium heat.
  • Place the wrap seam side down and toast for 1-2 minutes per side until golden brown.

Step 5: Serve & Enjoy

  • Slice in half and serve immediately with extra sauce or salsa on the side.
