Soft Gluten-Free Chocolate Chip Cookies

Ingredients
- 8 tablespoons unsalted butter melted and warm
- 3/4 cup light brown sugar packed
- 1/3 cup granulated sugar
- 1 large egg
- 1 tablespoon vanilla extract
- 1 tablespoon milk or non-dairy milk optional
- 1 3/4 cups gluten-free all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cups semisweet chocolate chips
Instructions
Beat the warm melted butter, sugars, egg, optional milk, and vanilla until combined.
Add flour, baking soda, and salt; mix until no flour pockets remain, then stir in the chocolate chips.
Cover and rest the dough for 30 minutes.
Heat the oven to 325°F and line baking sheets with parchment.
Scoop dough into portions about 2 inches apart, roll into balls, and shape into tall cylinders.
Bake for 12 to 14 minutes, rotating the pans halfway, then cool on the sheets.
